Unfortunately, there's no way (that I know) of to copy the formatting of the selected paragraph into a style that already exists, e.g. Obviously, if the other paragraphs already have the necessary direct formatting, their appearance won't change when you apply the style, but you can see that the style is applied by looking at the style name shown in the formatting toolbar. You can then apply your new style to other paragraphs by double-clicking the style name in the list. That will create a new style with the formatting from the current paragraph, and apply that style to the paragraph.
The easiest way to do that, for paragraph formatting like a heading, is to place your cursor in the formatted heading and then, in the Styles and Formatting window, choose "New Style from Selection" from the button/menu at the top right.
So, what you want to do is convert your direct formatting to style-based formatting, right? Unless you have used a lot of spaces in the layout this should work. Then go through the document and apply the new styles. You might have to reselect the pasted text and do a Format > Default formatting. Save as template (File > Template >) Then either copy the old document and do a paste special (unformatted text) into the new file. In the mean time, plan out the styles that you want to have and create a new template for this, that is, open a new Writer document, modify or create the styles you need. I hope you can post a file where we can have a look at it.
